I have researched cavalry 1 and cavalry 2 has finished but it says the alchemists need my assistance but does not tell me what to do to assist them. Any suggestions?

Just click on the cavalry icon in the science window. It will tell you what to do.

(If you already have some cavalry units, you need to upgrade them to level two. It will cost some resources.)
